Recently, we invited Chef Nisha Vora, author ofThe Vegan Instant Pot Cookbook: Wholesome, Indulgent Plant-Based Recipes(in stores June 2019) and mastermind behind the popular Instagram@rainbowplantlifeinto our test kitchen.

Not only did she whip up a handful of tasty vegan recipes, but also she taught us a thing or two about cauliflower. Namely, the best way to cut it—and avoid showering our entire kitchen counter in florets like we usually do.)

Her trick? Grab your largest cutting board and turn the cauliflower head upside down. With a chef’s knife, cut out the core by slicing through the floret’s stems where they attach to it.

And hey, fun fact: Ina Garten alsocuts her cauliflowerthis way. If it’s got the queen’s seal of approval, it’s got ours.

Check out Vora’screamy vegan lentil and roasted vegetable bakerecipe and put your newfound skills into practice.
