A Taste of Koko

If “tiki drink” conjures up images of a tacky, skull-shaped plastic glass (and dingy ambience), Coterie member Jane Ko is here to change your mind with the Queen’s Park Swizzle. Named after the Queen’s Park Hotel in Trinidad, where it was created in the 1920s, the lime-rum cocktail is a breeze to make but oh so elegant.

Ingredients

1 ounce fresh lime juice

½ ounce simple syrup

Crushed ice

2 ounces rum

6 to 8 dashes Angostura Aromatic Bitters

Directions

1. In a tall glass, muddle the mint leaves, lime juice and simple syrup.

2. Fill the glass with crushed ice. Pour the rum over the crushed ice and swizzle with a mixing spoon (or aswizzle stickif you have one) until the glass is ice-cold and frosted.

3. Pack the glass with more crushed ice and top with bitters. Garnish with mint leaves.
